Nearly everything we use comes straight from the island. Chef Conroy personally selects ingredients from the resort’s gardens and nearby farmer’s markets. And the day’s catch is delivered straight to our dock by local fishermen.
Our commitment to safeguarding the environment extends well beyond ingredients. “I take a personal initiative to use recycled materials in the kitchen,” Chef explains, “as well as stones and woods from the mountain.”

Chef Conroy Arnold grew up in Wait-a-Bit, Jamaica, where he developed his love of traditional island cuisine. After earning degrees from SUNY and the Culinary Institute of America, he honed his skills at world-renowned restaurants including New York’s famed three-star Nobu. Chef’s distinguished career includes training in French, Japanese, and Asian-Latin cuisines. Before coming to Hermosa Cove Conroy served as Executive Chef at GoldenEye Resort in Jamaica, New Brunswick’s Hotoke, and Ti Kaye Village in St. Lucia. Since returning to the land of his birth, Chef Conroy has led his team to numerous honors. Conroy was named Chef on the Rise at the 2014 Table Talk Awards, and Christopher’s received TripAdvisor’s coveted 2016 Certificate of Excellence.A Taste of Jamaica
Our Chef Conroy is hard at work on his blog, The Stuttering Chef, a celebration of Jamaican culture and Jamaican cuisine.
