Our culinary philosophy embraces the freshest produce and the bounty of the Caribbean. Nearly everything we use comes straight from the island. Chef Conroy personally selects ingredients from the resort’s gardens and nearby farmer’s markets. And the day’s catch is delivered straight to our dock by local fishermen. Our commitment to safeguarding the environment extends well beyond ingredients. “I take a personal initiative to use recycled materials in the kitchen,” Chef explains, “as well as stones and woods from the mountain.” An ecological ethos underlies all of Hermosa Cove.
